Join Avon Hills Folk School (AHFS) as they build their community wood-fired oven! This 5-day hands-on workshop will teach you the principles and basic techniques for building your own backyard (or community) brick oven while helping AHFS create the oven they need for big pizza parties and wood-fired breads classes. 

The oven design we will focus on is a rectangular roman-style oven with an arched ceiling that is perfectly suited for baking live-fire foods like pizza and seared meats as well as any baked goods you may want to make, from bread and pastry to baked beans, roasts and more. During this class we will build just the firebrick core of the oven (hearth insulation, hearth, walls, arch and chimney) but a discussion of the complete process from start to finish will be included.

We'll also visit nearby friends of the folk school’s masonry oven for a pizza lunch to learn a little more about the workings of these ovens. As time and interest allow throughout the build, we will also discuss the details of baking bread and other food in the wood-fired oven, starting natural leaven from scratch, and other techniques that will help students make great artisan bread at home, with or without a brick oven. 

The physical demands of this class will include lifting and moving heavy objects, using and being near power tools, and walking and standing for most of the day. 

Required tools:

  • Work clothes and shoes/boots

  • Work gloves

  • Carpenter’s pencil

  • Tape measure

  • Personal protective equipment (safety glasses, ear protection, and dust mask

  • Notebook or other method for note-taking

Caleb combines his two interests of building and baking bread into the art and craft of wood-fired ovens. He is drawn to the simplicity of their design, but also the skill needed to perfect the art of wood-fired baking. He is dedicated to a lifestyle of growing and harvesting food, building by hand and enjoying the outdoors. He lives with his family outside of Grand Marais, MN.
